Chef Emiliano Sanz hails from Segovia, Spain, where he studied cooking as a young man. He apprenticed at some of the finest restaurants in Madrid and came to Baltimore in 1971 where he worked under Pedro Sanz\'s supervision. After Pedro\'s death, he became Tio Pepe\'s co-owner and chef. His unique style of combining classic techniques with regional Spanish cuisine, has made Tio Pepe\'s a Baltimore favorite. Among many other awards, it has remained among \"Baltimore\'s Best\" for 12 consecutive years in Baltimore Magazine. Some of the best dishes are Zarzuela, which is a superb combination of shellfish in a sherry-scented seafood sauce, and of course, the Paella, a favorite Spanish rice dish with chicken, veal, lobster, chorizo, shrimp, clams and mussels, seasoned with saffron.
Tio Pepe has great Spanish ambiance, great service, and superb Spanish food with a continental/French interpretation. Some customers swear by Tio Pepe\'s soft shell crabs and various seafood dishes, but others think that such signature dishes as roast suckling pig, paella, chicken, and lobster, plus their red snapper in green sauce are the best in the Mid-Atlantic region.
