Espuma was already an established restaurant when Chef/owner Jay Caputo purchased it in May of 2004 and morphed its cuisine into his own unique cooking style, which is characterized by flavor permutations reminiscent of the earthly freshness of Northern California with classic Mediterranean flavors of yore. For the most part, Chef Caputo draws from the cuisines of Spain, Portugal, France, and Italy, and uses his extensive experience gleaned from cooking in the finest kitchens in Northern California in order to create a fantasy-like, delightful cuisine.
