About

In 1997, Steve and Patricia Stanley started Café Rio in a small little town in Southern Utah, called St. George. They sold their six locations to Bob Nilsen who has since then grown the business into 67 locations in 11 States, including Maryland and Virginia. Everything we do is fresh: We hand-squeeze 1,000 limes a day (no frozen lime juice here!); hand scoop avocados; grate all our cheese; hand roll hundreds of tortillas a day, and prepare them in front of you. Nothing is premade. We don't have microwaves or freezers in any of our locations.

Café Rio earned Zagat's stamp of approval. It means we’re really good at what we do. For the past three years, Sandelman and Associates, a market research and consulting firm that provides food-service companies with consumer information, has rated Café Rio the #1 Overall Quick Service Restaurant in the Country. It’s like winning an Oscar. Café Rio has won over 60 awards from groups such as Best of City Search, City Weekly, INC 500, Utah Business Magazine, Utah’s Best of State, Alfred P. Sloan Awards, and the Oxnard Salsa Festival, just to name a few. Give us a try Amigo; we’re pretty sure you’ll like us, and if you don’t, drop us an email and tell us how we can make things better, because without you, there isn’t an us.

Review - Café Rio Mexican Grill
Brian Patterson, Gazette.net | June 1, 2011

Café Rio Mexican Grill started slinging tacos in Utah in 1997 and has taken Western states by storm ever since. With hand-rolled tortillas, fountains of fresh limeade and effusive hospitality, the first outpost east of the Mississippi opened this past April in Olney, with sights set on several additional locations in the metropolitan Washington, D.C., area. Manifest Destiny seems to have finally folded in on itself like an oversized burrito.
